As recorded in the Old Testament, Ephraim son of Joseph, was given the birthright to Israel from his father, and the ox was given as a symbol of Ephraim and his posterity to represent their 'strength and determination'. 

During the early years of the restored Church much of the blood of Ephraim was found in Europe. As these saints converted to the restored gospel and immigrated to America, again the symbol of the ox came to represent the strength, sacrifice, and determination of these faithful pioneers as they trekked westward to Zion.

 

In these latter-days the mission of modern-day Ephraim is the sacred privilege and responsibility to bear the priesthood, take the message of the restored gospel to the world, and raise an ensign to gather scattered Israel, as represented with the twelve oxen holding up the baptismal fonts in Latter-day Saint temples.
